ONION SANDWICHES

     My sweet Spanish white onions have just matured enough to make excellent sandwiches. Now I know some people when they hear onion sandwiches will turn up their nose. I know the micro manager is not fond of onion sandwiches. 

     On the other hand there are many recipes for a great onion sandwich. I just have two slices of bread spread lightly with mayonnase. I slice the onion in 1/8 to 1/4 inch thickness. A little salt and pepper and I have one of my favorite sandwiches.

     Onion sandwiches have a history in our family. Our Dad was an obsessed fisherman. He loved to fish and have people with him. So when Dad called for a fishing day it meant that you would have to have an extremely good excuse not to go. Dad would always say, "I'll bring the lunch!" And you guessed it. The lunch was always onion sandwiches. 

    Dad loved fishing but he also liked eating fish. His favorite was to have a fish fry right on the beach after the fish had been caught.

    His favorite fish to eat was the sucker and again many people will sneer. He loved fried suckers and had Mom can many quarts. These fish have many bones so many people don't like them. 

    Here's the last time I went fishing with Dad going after his favorite fish. You caught the suckers when they went up the creeks to spawn. Now this was illegal but Dad loved those fish enough to break the law.

  1. Ok, that'd have to be a pretty sweet onion for a sandwich. Sucker fish look like they're being kissy. Surprised he liked them with so many bones. That's certainly being prepared for winter to can up those fish. People near the Canadian border in North Dakota talk about Walleye fish being bony but tasty. If our food prices keep increasing, I'll be trying onion sandwiches! Nice that you have those fishing photos. Linda in Kansas

    1. Suckers have the small mouth like white fish. Walleye belongs to the pike family and it is considered to be a delicious fish.

  2. When the suckers are running in early spring it can be fun...and illegal here too. I think I will pass on the onion sandwich...but you go ahead Red!

    1. There are quite a few varieties of suckers . Many are less that 12 in long. there's a creek less than a km from my house and suckers spawn there.

  3. My father loved an onion sandwich too! His recipe was close to yours except he used butter instead of mayo and he used a lot of s & p. Okay, maybe it wasn't so close after all :)

  4. Don't fancy the suckers but if I ever come across a good sweet Spanish onion I might try an onion sandwich - sounds delicious.

  7. I have never heard or eaten an onion sandwich but it sounds tasty to me and I’ll give it a try the next time I buy a sweet onion.

  9. I will stick to my tomato sandwiches. If those onions were lightly grilled, I might think about it. Raw? I don't know.

    1. Oh I like toasted cheese whiz and tomato sandwiches. So all of Aug, Sept and Oct I have tomato sandwiches. We also freeze many tomatoes.

  10. Sue's dad used to eat onion sandwiches. I tried one once, but was decidedly unimpressed. I think it was quite a strong onion.

  12. I grow red onions. Like you I love a good onion sandwich although it's a while since I had one. However I can see my next one being for lunch tomorrow with some soup.

  14. Your day fishing sounds like great fun. The onion sandwich is one of my favorites too. I especially like sliced red onion with lots of butter on the bread and a little salt and pepper.

  17. I've had an onion sandwich with mustard. Mayonnaise sounds pretty good too. I wonder if sucker fish would be anything like the carp we have here.

    1. the sucker fish has a small round mouth and you can't catch them with a hook. I will try some mustard with my sandwich.

  21. I've never heard of making a sandwich out of onions alone. Onions ON a sandwich, yes, but not JUST onion!

    I am unfamiliar with suckers. I thought they were going to be small fish until I saw your pictures! They look like a type of catfish, maybe?
