There is more to say on my ginger carrot soup.
I mentioned my fiasco on face book and there were many comments.
Then there were comments on blogger. As always the comments were tactful and made sense.
I took the recipe from a site called all recipe. I've taken recipes from that site before and found their recipes work well. Many of you had a bit of experience working with ginger. Your first thoughts were that is a lot of ginger. I'm sure it was far too much ginger. There were also suggestions about the use of other forms of ginger. I wondered about that one as I was grating ginger.
So your comments were much appreciated.
There was also an anonymous comment. I usually delete anonymous comments as I've been burned before. I knew who this commenter was. It was Uncle Brent. Uncle Brent felt very sorry for me so he baked a batch of ginger snaps. Were they ever good! It made me feel better. I forget if he used his Grandma's recipe or his Mom's. So I have a local that I can call on for help .
Now since I've been thinking about ginger the expression "full of ginger " keeps popping in my head so I had to look it up. I found that there were at least 69 synonyms for full of ginger. I'm not sure what this has to do with my soup . I guess I got side tracked . Maybe that's what happened with my soup.
Yeah for Ginger Snaps! I heard on one of the cooking shows that you should use three kinds of ginger for the best ginger flavor, powder, fresh and candied...I did not know that I always use the powder. :) Windy and cold here ...thanks Red for sharing your Polar weather with me:)

DeleteI think you are a very good cook to be willing to try something new like that, especially since you have never cooked with ginger before. I hardly ever use ginger but I do have an apple cake recipe that uses a teaspoon of powdered ginger along with some other spices. Those ginger snaps sound good!

DeleteI'm not a fan of ginger. I used to cook with it quite often. I used fresh ginger and grated it for several recipes. Then one day I couldn't tolerate the taste of it anymore and haven't used it in more than a decade. Sometimes I think about trying it again, but not sure.

DeleteI love ginger! I have somehow lost my recipe for gingerbread and none I’ve tried are “it”. It’s one of those regrets you never get over, losing a favorite recipe and not being able to duplicate it!

DeleteCoincidentally, I read this post about the carrot-ginger soup after just adding a bit of ginger to a pumpkin pie recipe. Also added cinnamon, nutmeg and cloves. A couple of days ago I added carrots to butternut squash soup, so that could be an alternative to use up your excess carrots, Red. Nice to get some home-made gingersnaps as a consolation.

ReplyDeleteGosh... I don't think I've ever had ginger snaps unless they're like gingerbread. I do like ginger. They say it helps nausea. I wonder. It was really kind of Uncle Brent to bake you some. I'm still trying to imagine what ginger tastes like with carrots.

ReplyDeleteWe just made a Thai Soup that called for grated ginger. I thought of you as I was grating it. It only called for a tablespoon and after tasting our soup it was great but guess what? It needed more ginger ;) I haven't had ginger snaps since I was a child. Maybe I should look up that recipe. Happy weekend to you Red :)
ReplyDeleteI don't like many things with ginger in them, but I do love gingerbread, warm from the oven, and pumpkin pie. Now I am drooling just thinking of them! You're getting a lot of mileage from your ginger experiment and follow up research. And at least now you know you don't need to ever buy fresh ginger again :)

Having read your last post you reminded me that I haven't made carrot and ginger soup for ages. I'll have to see if I can find my old recipe. As for ginger snaps....I've just added them to my shopping list.

Born and brought up in south India, I use ginger a lot. I have a ginger rooting in a container on the kitchen window. Waiting to see how it grows in Canada. Ginger tea with honey and lemon is good when you have cough.
